Aguachile Verde

Ingredients

• 2 lb raw shrimp, peeled, deveined, butterflied

• Salt

• Black pepper

• 1¾ cups fresh lime juice (about 12 limes)

• 1½ cucumbers total

• 1 whole cucumber, chopped, center/watery part removed

• ½ cucumber for the sauce, center removed, some skin on

• 2 jalapeños

• 2 serranos

• Small bunch cilantro

• ½ red onion total, thinly sliced (reserve a small wedge for the sauce)

• 1 tsp Maggi

• Avocado

Directions

1. Season shrimp with salt and pepper.

2. Cover shrimp with lime juice and cure about 20 minutes until opaque. Reserve the lime juice.

3. Add the chopped cucumber and thinly sliced red onion to the cured shrimp.

4. Blend ½ cucumber (center removed, some skin on) with jalapeños, serranos, cilantro, a small wedge of red onion, Maggi, and about ½ cup of the reserved lime juice. All ingredients should be ice cold to keep the sauce bright green.

5. Pour the aguachile sauce over the shrimp, cucumber, and onion.

6. Finish with avocado.
